Types of Tea
Canadians drink over 7 billion cups of tea each year. Do you know what you're drinking? Much like the way all wines come from grapes, all teas come from the "Camellia sinensis" shrub, an evergreen that can grow up to 60 feet if left untended. But when cultivated for tea harvesting, the tea bush is kept to about three feet. And like wine, there are many varieties - over 3000 in fact - some which are named after the region they are grown in (such as Keemun in China and Assam in India).
Teas are harvested after each "flush" - the sprouting of the top two leaves and bud. Only these two leaves and the bud are hand-picked and then processed into one of four main types of tea: Black, Green, White and Oolong.
